Minimum
standards for organic production and processing are set by the
European Union and interpreted for the UK by the Advisory Committee
on Organic Standards (ACOS, formerly UKROFS), which is part of DEFRA.
A number of Certification Bodies are licensed by the UK government
to enforce the organic standards at farm level. They also license
other elements of the food production chain, including processors
and abattoirs. For a list of certification bodies active in Wales
