Public procurement:

Public sector institutions - schools, hospitals, local authorities - in Wales and the UK are becoming increasingly conscious of the importance of a healthy diet and the benefits that local and organic food can bring. In addition, visits to organic farms can promote links between the curriculum and school menus. 

Total Welsh Public Sector food purchases were £66m in 2005 of which £20 million on fresh food.
